BACON WRAPPED PINEAPPLE WITH HONEY MUSTARD GLAZE
Makes 5 sticks
10 strips of bacon
Half a pineapple
For the glaze
6 tbsp honey
5 tsp dark brown sugar
2 tbsp mustard
5 satay sticks for skewering
1 Preheat oven at 200 deg C.
2 Cut pineapple into bite-sized pieces. Then skewer two pieces into each satay stick.
3 Wrap strips of bacon around the pineapple.
4 Lined the skewers on a baking tray lined with aluminium foil. Bake the skewers in the oven for 15 mins.
5 Make glaze by combining honey, brown sugar and mustard together in a bowl. Stir well until there are no lumps.
6 After 15 mins in the oven, take out the skewers and pour glaze onto the bacon wrapped pineapple chunks. Then place it back into the oven for another 20 minutes until golden brown.
